What You'll Need:

  • 4 garlic cloves  
  • 1 carrot  
  • 4-inch (10 cm) piece of ginger  
  • 1½ tsp. ground turmeric  
  • 1 onion  
  • 2 leeks  
  • 4 stalks of celery  
  • 2 stalks lemongrass  
  • 1 tsp. black peppercorns  
  • 1 tbsp. peanut oil  
  • 1 free-range chicken  
  • 3 liters of water  
  • 4 sprigs thyme  
  • 2 bay leaves  
  • Salt and pepper to taste   

Let’s Make Some Broth!

1. Start with the onion:  

First, slice your onion in half. Heat a non-stick frying pan over medium heat and place the onion, cut side down. Let it cook for about 8 minutes until the bottom is golden and caramelized. This trick adds a deep flavor to your broth, and trust me—it’s worth the extra step.

2. Chop, chop, chop:  

While the onion is doing its thing, chop up your leeks, carrot, celery, and lemongrass into 1-inch pieces. Don’t forget to peel and slice your ginger. Oh, and give those black peppercorns a quick crush with the back of a spoon.

3. Get that turmeric sizzling: 

In a large soup pot, heat up the peanut oil over medium heat. Once it’s hot, toss in the ground turmeric and let it sizzle for about 30 seconds. This little step helps release all that amazing flavor.

4. Time to add the chicken:

Place your chicken (yes, the whole thing!) into the pot and pour in 3 liters of water. Bring it all to a boil, then turn the heat down to simmer. You’ll want to skim off any foam that rises to the top to keep your broth nice and clear.

Now, add the caramelized onion, all those chopped veggies, peppercorns, thyme, bay leaves, and half of your ginger and lemongrass. Let everything simmer on low heat for about 2 hours. Don’t forget to skim off any foam every now and then!

6. Strain and chill:  

After 2 hours, take the chicken out and set it aside. Strain the broth through a fine mesh sieve to remove the solids, leaving you with a beautiful, golden liquid. Let the broth cool, then pop it in the fridge until the fat solidifies on top. Once it’s firm, scoop it off for a leaner broth.

7. One last simmer:  

Put your broth back on the stove and add the rest of the ginger and lemongrass. Let it simmer for another 45 minutes to really let those fresh flavors come through.

8. Enjoy your broth:  

Before serving, remove the ginger and lemongrass. This broth is perfect on its own, but you can also use it as a base for soups, or keep the leftover chicken for salads, pasta, or a cozy stew.
