Ingredients
Serves 2
- 2 tsp. sesame oil
- 3.5 oz. (100g) black rice noodles
- 7 oz. (200g) turkey fillet, chopped
- 1 broccoli, diced into florets
- 1 tbsp. olive oil
- 4 tbsp. soy or tamari sauce
- 1 tbsp. rice vinegar
- 1 tbsp. grated ginger
- 2 tbsp. spring onion, chopped
- Handful of coriander, for garnish
Directions
1. Cook the Noodles
Start by preparing the black rice noodles according to the package instructions. Once they’re cooked, strain and rinse with cold water, then set them aside. This will keep the noodles from sticking together while we prepare the rest of the dish.
2. Cook the Turkey and Broccoli
Heat a tablespoon of olive oil in a wok or deep pan over medium-high heat. Add the chopped turkey fillet and let it cook for about 3-4 minutes until it starts to brown. Then, add the diced broccoli florets and fry for another 1-2 minutes to begin softening them up.
3. Add Water and Soy Sauce
To help the broccoli soften while soaking up flavor, pour in half a cup of water along with 3 tablespoons of soy sauce. Allow this to cook until the water evaporates, stirring occasionally. In about 10 minutes, the broccoli should be tender, and the turkey will be juicy and flavorful.
4. Prepare the Sauce
While the turkey and broccoli are cooking, make the sauce. In a small bowl, mix the remaining soy sauce with sesame oil, rice vinegar, and freshly grated ginger. This sauce is where the stir fry gets its zing!
5. Combine Everything
Add the cooked noodles to the turkey and broccoli in the pan, stirring to warm everything through, about 2-3 minutes. Once heated, take the pan off the heat, pour in the sauce, and give it a gentle toss to coat everything in that delicious dressing.
6. Serve and Enjoy
Top your stir-fry with chopped spring onions and a handful of fresh coriander. These final touches add a pop of color and freshness to each bite.
